1/2 cup butter (112.5 gr)

Ultimate Cinnamon Roll

Ingredients:

Ingredients :
1-1/2 packages (about 3-1/4 teaspoons) dry yeast
1/4 cup warm water
1/2 cup shortening
1/3 cup sugar
1-1/2 teaspoon salt
1 cup milk
1 egg
4 to 5 cups sifted flour
melted butter
brown sugar
cinnamon
raisins (optional)

Vanilla Frosting
2 cups powdered sugar
1 tablespoon butter, melted
1 teaspoon vanilla
milk or cream (2 to 4 tablespoons)

Preparation:

Add the warm water to the yeast and soak 10 minutes.
Scald milk; pour over the shortening. Add sugar and salt and cool to tepid. Add the dissolved yeast and beaten egg. Add 4 cups flour adding one at a time beating after each addition.

Dough should be soft yet firm enough to handle. Knead on floured board until elastic and smooth. Avoid too much flour. Turn dough into well oiled bowl. Let rise for 1-1/2 hours.

Press dough down and divide into workable size. Roll dough out into a rectangle. Cover with melted butter. Layer with a generous thick layer* of brown sugar. Sprinkle on cinnamon* as desired. If you like raisins, layer on a layer of raisins. Roll up jellyroll fashion.

Using a scissors or a piece of string, cut off slices about 1 to 1-1/2 inches thick. Place slices in an 8 or 9 inch round greased cake pan. Place one slice in the middle and other slices around it. Press rolls down to even out and fill pan. Let rise until rolls fill the pan generously...about another hour.

Bake in a 350 degree F oven about 15 - 20 minutes. If rolls get too brown, cover with a piece of tine foil until the end of baking. Do not over bake rolls.

Remove immediately from pan by inverting onto a plate and then tip over onto another plate to right the rolls.

For the Frosting:
In a medium bowl, place sugar, butter and vanilla. Then stir in enough milk or cream to reach a thick, hardly-able to stir consistency.

Spread over warm rolls as soon as they are placed on a plate to let the frosting melt and run into the rolls.

Macaroni Schotel

Ingredients:
- 250gr macaroni
- keju kraft (menurut selera), parut. Sisihkan untuk taburan.
- 1 butir telur
- 250 ml susu ultra plain
- 1 kaleng kecil korned beef Pronas
- blue band margarine untuk mengoles
- 1 bks cream soup Royco rasa ayam (terserah sih kalo soal rasa menurut selera aja)
- 1 sdt garam
- 1 sdt merica


Directions:
1. Rebus macaroni sampai matang sisihkan.
2. Campur susu, korned, keju parut, garam, merica, cream soup, telur. Aduk rata. Kalo gue sih pake mixer biar cepet soalnya korned-nya menggumpal euy. Kalo mo pake mixer pake yang kecepatan paling kecil dan bentar aja asal udah lumer korned-nya.
3. Masukkan macaroni rebus tadi. Tunggu dingin yah karena kalo panas nanti telornya mateng (ini juga menurut mpox asri loh, g sih lom pernah nyemplungin macaroni panas ke dalam kocokan telur ini.. wong ini pertama kalinya g bikin macaroni schotel huehehe).
4. Oles loyang dengan margarine sampai semua permukaannya tertutup.
5. Tuangkan adonan tadi ke dalam loyang, taburi sisa keju parut di atasnya.
6. Bakar pada suhu +/- 180 derajat selama 20 menit.
7. Hidangkan panas, lebih lezat kalo ditambah saus sambal.

Biasanya disajikan dengan kari (ayam, kambing mopun sapi). Tapi dimakan kosongan gituh juga enak kok buwat cemilan, ato dimakan ama madu. Dipakein keju juga pasti enaaakkkk… Ini resep yang kudapet dari tante, sedikit kumodif biar lebih lembut tapi ga eneg. Stepnya banyak tapi gak rumit kok, asal tlaten ajah dan siapapun pasti bisa, ga perlu keahlian khusus. Cobain yaaa….. !


PRATHA, ROTI MARIYAM

Bahan:

500 gr tepung terigu protein tinggi
150 ml air hangat, bisa lebih atau kurang sesuai kondisi adonan

2 butir telur + 2 kuning telur

1.5 sdt garam atau secukupnya
Margarin secukupnya, lelehkan

Minyak sayur secukupnya
Cara:
Letakkan tepung di baskom, buat lubang di tengahnya.
Telur dan garam dikocok lepas, tuang ke tengah lubang, uleni sambil diremas hingga berbutir.
Tuangi air hangat dikit2 sambil terus diuleni hingga kalis.
Tutup dengan selembar plastik dan diamkan selama 3 jam.
Bagi adonan menjadi 16-20 bagian.
Siapkan meja atau loyang lebar, olesi minyak tipis2.
Ambil satu bagian adonan, tipiskan di meja/loyang sambil diratakan ke segala arah hingga tipis transparan seperti bikin kulit martabak telur.
Oles permukaannya dengan mentega leleh, pilin dari satu sisi dan gulung menjadi satu utas gulungan panjang.

Kerjakan sampai habis dan semua menjadi gulungan panjang.
Ambil satu utas, pegang masing2 ujungnya. Ujung kanan digulung ke atas, ujung kiri digulung ke bawah sehingga kedua gulungan bertemu di tengah.
Belit sehingga kedua gulungan bertumpuk jadi satu, atas dan bawah.
Lakukan pada semua bagian yang lain sehingga semua menjadi tumpukan gulungan.
Ambil satu tumpukan gulungan, pipihkan menjadi lingkaran setebal 0.2cm. Kerjakan sampai habis.
Siapin teflon, oles dengan minyak sayur, panggang tiap lembar pratha dengan api medium sambil dibolak-balik hingga matang dan kecoklatan.
Tumpuk 3 lembar pratha yang baru digoreng, berdirikan posisi vertikal, geprak dengan punggung sutil. Sajikan segera.
Note:
Gepraknya jangan terlalu napsu sampe babak belur ya... asal flaky ajah. Gambar yang babak belur diatas adalah pratha yang uda disobek2, teksturnya cakeb kan...
Kalo suka bisa ditambah keju parut di tahap menipiskan adonan, dijamin guriihhhh, jadi cheese pratha. Pake parmesan ato cheddar terserah.

Chocolate Chip Cookies

i'll make these babies as a celebration when i finished exam, and i'll give them out to my friends :D, i wont use full recipe though, coz i'm happy with just tasting each of them :)

Custard Biscuit

i have a box of custard powder that i bought from ALDI (bought because the packaging looks delish =_=)
so, i did not know what to do with that, i thought if i make it into custard for pudding, that would be too normal :(. i resort to mr.google to find a recipe about custard powder, and WOW, i was absolutely amazed that you actually make yO-Yo biscuit, or what we usually call in Aussie as ...... from custard powder. My cousin always says how bloody good the taste is, but i never bought one, they look bloody thick, like 1 cookies can already send me to calorie overload =.=

but, i didn't have caster sugar on hand, so, i decided to make other type of cookies,
and i found CUSTARD COOKIES recipe :)
i was running out of time and wanted to sleep, so i make the quick recipe as published in forksbootssandapalette

i ended up with 3 dozen, using half recipe (coz everyone in my house is not a fan of cookies)... maybe my size was significantly small compared to the original recipe?. It tasted a bit like baby cookies, but only a hint, baby cookies is so much more custard-y :). i have upped the custard by a tablespoon though and add heaps of vanilla, but it did not end up that tasty for me

the appearance , though , pleases me so much :D. The cookies turned out to be very crispy, and it looks yellow !! so cute !! ^^, like the cookies you see on the display of bakery ^^. i am so proud of the appearance :p
i always bake cookies, but ever cookies that i bake always look a bit brown-ish :(
i suppose the formula is to bake it long time in low temperature :D, when i tried to make it chewy, i could not, coz when i under baked it a bit, it turns out cakey, so, i think it HAS TO BE CRISPY
(i love my current oven btw, it never fails me ^^)

conclusion : i won't try the recipe anymore, i have succeeded, and ended up with so much cookies, i do LOVE LOVE the end result, i want more custard-y cookies though ;)

next time i'll try this recipe : custard powder cookies with white chocolate

Korean Fried Chicken & Chicken Cordon Bleu

yesterday, i suddenly feel like making Korean Fried Chicken that i used to make, that recipe wins everyone's heart, totally .. !!
but, after searching in the internet.. where the hell is the recipe?




in a (still) attempt to find the recipe i previously used, i keep searching and trying Korean Fried Chicken recipe in internet, gosh, it does take a lot of time to find one recipe :'(
So, today, i decided to test another Korean Fried Chicken recipe, and decided to make a sesame-soy sauce based sauce instead of the gochujang based sauce, coz last time my boyfriend could eat that gochujang based but did not really enjoy it, also the first successful chicken that lingers in my mind is the chicken with soy sauce-sesame based sauce, i used the recipe from vietworldkitchen

Korean Fried Chicken
Yangnyeom Dak
(Serves 4)

8 chicken thighs
1 yellow onion, grated (use largest hole on the grater)
2 cloves garlic, minced and crushed into a paste
Scant 1/2 teaspoon salt
1/4 teaspoon pepper

Batter:
1/2 cup all-purpose bleached or unbleached flour
2/3 cup cornstarch
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoons sugar
3/4 cup cold water (ice it before measuring)

Chile sauce option 1:
6 tablespoons Korean chile paste (gojuchang)
6 tablespoons ketchup
1/4 cup sugar
1/4 cup toasted white (hulled) sesame seeds
2 to 3 tablespoons fresh lemon juice

Chile sauce option 2:
3 tablespoons chopped garlic
3 tablespoons chopped fresh ginger
6 large red chiles, such as Fresno or Holland, seeded and roughly chopped
2 tablespoons canola oil
3 to 4 tablespoons light (regular) soy sauce
2 tablespoons packed brown sugar
3 to 4 tablespoons Korean barley malt syrup (mool yut) or light corn syrup

American Risoles

my bf, is a self-proclaimed lover of deep fried foods, sometimes, he even loves those deep fried nibbles more than me :p. Everytime he eats deep fried foods, he always have that oh-very-happy-satisfied look on his face, so, one day i asked him

me : dude, do u know ameriacn risoles?
my bf : which one is that?
me : risoles with ham and boiled egg and cheese on the inside
my bf : i knoow !! i like that and i always ask my mom to buy it for me from the wet
market
me : how about i make that for you?
my bf : yeaay !!

so, i decided to make this risoles for the very first time in my life, well, actually i did make it before, and it got devoured fast, yet, considering that the my maid was the one making the skin and i was the one who instruct and wrap them, i cannot say that i have made one myself. Acually i did try to make the skin myself, but, second attempt failed and i didnt bother to try it again

it is so damn hard for me to make the skin, well im not that patient to make that thin and delicate skin :(, i'd even rather make pancakes than crepes ;)
but, to make my boyfriend happy, i decided to try it, making everything from scratch, anyway i have just finished my first exam, so i need some fun (experiment in the kitchen) and this recipe is one of those recipe that i would really like to have a hold on anyway :D

we went quickly to woolworths to buy ingredients that we didnt have. We spent like an hour there looking at other aisle and buy stuff that we did not need as well though x(, that's why we have this food as our dinner at 12 pm

After m exam this week finished i'll be totally be dancing around in the kitchen :D
i want to cook this ayam merah madu for my boyfriend who is a big fans of deep fried stuff :p

Banana bread hey hey~

i used 2 bananas, compared to the previous one, this banana bread is significantly less dense, crispy on the outside, and inside is so sooft, i may as well regard it as banana cake
i dont know why this one is so different with the picture of the recipe, probably coz the kitchen scale a bit fucked up or i was not too care when i making it (was very rushing to quickly study for my behavioural study exam :( )

need to mention that i already put half of the butter from a newly bought butter but the scale still says it's only 120 when the whole butter itself weights 500 grams :/

for the frosting, i did not have icing sugar on hand, so i used white chocolate cream cheese frosting (to get rid of my Cadbury "dreamy~" as well)

verdict : my boyfriend prefers this one to the last one (coz this one is crunchy), my sister said she still cannot taste the banana (will leave it one day first before i try it), i also loves the crispiness of that banana cake. Downside : we prefer the cream cheese frosting to be more cheesy, the frosting this time, is good, but some said it's too sweet

Pulao Rice

emm, i may say, when i cook it, the small was astonishing, very fragrant, everyone knew right away that i was cooking something, yet, the taste was plaaaiiiin, probably because i didnt put the tomatoes? anyhow, i saved the rice by adding chicken powder, and my sister likes it veryy verryyy muuch !! i'll try to cook it again next time

Nasi Kebuli

Ingredients:
½ kg daging kambing (kaki depan), potong sesuai selera
½ kg beras basmati, rendam dengan air selama 30 menit, tiriskan
1 sdt pasta tomat
8 buah cengkeh
6 buah kapulaga
1 batang kayu manis
½ bawang bombay ukuran sedang, cincang halus
3 sdt ghee
Safran
750 ml air panas
Garam dan gula secukupnya

Bumbu, haluskan:
½ bawang bombay ukuran sedang
3 siung bawang putih
3 buah cabe merah
3 sdt ketumbar bubuk
1½ sdt jinten bubuk
½ sdt pala bubuk
1 ruas jari jahe
1 ruas jari lengkuas

Pelengkap:
Kismis, tumis sampai kismis mengembang
Natural yoghurt

Directions:
1. Panaskan 2 sdt ghee. Tumis bawang bombay sampai layu, lalu tambahkan bumbu halus, cengkeh, kapulaga dan kayu manis; tumis sampai harum.
2. Masukkan daging kambing, masak sambil diaduk sampai air dari daging kambing habis dan keluar minyaknya.
3. Tambahkan air panas, masak dengan api kecil sampai daging kambing setengah empuk.
4. Masukkan pasta tomat dan safran. Aduk sebentar sampai pasta tomat larut, lalu masak kembali dengan api kecil sampai daging kambing empuk.
5. Tumis sebentar beras dengan 1 sdt ghee. Masukkan beras dalam rebusan daging kambing. Tutup panci dengan aluminium foil dan kemudian tutup dengan tutupnya. Masak dengan api kecil selama 15 menit.
6. Setelah 15 menit, matikan api, buka sedikit aluminium foil dan biarkan uap keluar sekitar 1 menit. Tutup kembali dan biarkan selama 5 menit. Angkat dari api dan siap untuk disantap bersama pelengkapnya.

Catatan:
Karena beras sudah direndam dahulu selama 30 menit, perhatikan waktu penambahan air matang (bila air kaldunya tinggal sedikit), jangan sampai terlalu banyak.

Ying Thai at Lygon Street



When my boyfriend and i went to eat Il Dolce Freddo
something had captured our attention
an Asian restaurant in Lygon Street has people lining up outside
no.. they are not debt collector...
they are all lining up in queue to eat in this restaurant

it made us wonder, what's so good about this restaurant.. "Ying Thai" ?
this restaurant is the only Asian restaurant in Lygon street that makes people lining up

(FYI: Lygon street is like little Italy in Melbourne, everywhere u look around :
up, down, left, right = Italian cuisine, and gelati everywhere.
Sometimes you can even see a lot of Ferrari and those kind of out-of-reach cars,
parking on the street. *sigh...., i want onee of those please, take away :/ )

so, one day we had a chance to go to that Ying Thai restaurant,
greeted by aroma that makes our tummy sing heavy metal songs
we were SOLD

interesting dessert :)

we ordered what the waitress recommended us as the best seller

the entree :

Chicken wrapped in Pandan leaves (my bf's choice)

how can they wrap this really beautiful O.o

Verdict :
bf likes it, but it's not really my cup of tea, this does not give me enough kick of Thai foods
too mild for me :), but the chicken is juicy, and the aroma of pandan is good, so, overall it is good, but i will not order it again :D

Mains :
minced pork with basil and chilli, and coconut rice
verdict :
the minced pork is alright for me, but boyfriend likes it
the coconut rice however, is a new taste for us, we both like it, but one rice is enough for us
the rice, eaten alone, already got its distinctive taste, it's different to Malaysian's Nasi Lemak or Indonesian Nasi Uduk, this coconut rice is more on the sweet side, and it's mild flavor of coconut like the Nasi Lemak


Tom Yum Soup

verdict :
i LOVE LOVE LOVEEEEE the Tom Yum soup x)
i have never found Tum Yum soup with this kind of kick, everything is perfect
my bf didn't really like it because it was too spicy for his liking, but i devour every single drop of it, the sourness, the spiciness, all the combination kick me out of this world
i will DEFINITELY order this again

Things on plan :)

being in Australia enables me to encounter a lot of foods from various countries, so, i think why not take advantage of it? I WILL LEARN how to cook the foods instead of only enjoying it. this thought doesn't come without thinking, coz i also need to study too :p

It based on three reasons :
- Challenging & it enriches my knowledge
- Coz i can't find the ingredients in my hometown :(
- To save money (reduce eating outside) and make my sis also my bf HAPPY and HEALTHY :D

after doing some research, i decide to lay my hands on ..well... a lot of foods :p
my sister will soon be sleeping over at my house, as she was jealous of the Javanese Beef Steak i cooked for my boyfriend

so, i make appointments on undefined dates with :

Korean Sweet Cakes (Hoddeok) = For afternoon snack + my sis lunch box


Korean Kimchi Fried Rice = For Lunch / Dinner

because my bf has been in a lovey-dovey relationship with pork belly ever since he was a kid, he is a devoted lover to pork belly

Radish Kimchi (Mu Saengchae) = made to be eaten with bossam, so, i have to make this before i make bossam :)


Japchae = For Lunch/Dinner
when my bf is lovey dovey with pork belly, my sister is lovey dovey with this one :/
that's leave me lovey dovey with no one :'(

i once tried this in Sydney, and this is damn good, i still can feel the taste lingering on my lips >.<, Love Love it and hopefully i have found the correct recipe :)

Yay to Javanese beef steak x)--12 August 2010


result : bf was full, happy, sister was jealous, friend was tempted
i had raw porterhouse in my fridge, thinking thinking.. what should i make?
well, the day before yesterday i have made a simple porterhouse steak with salt and pepper
now, i need some more challenge
especially i am in a mission to find out how to cook porterhouse
....without turning it into rubber :(...

last time i experiment the porterhouse using marinating sauce, i cooked in 2 batch
1st batch : turned into beef jerky, damn dry
2nd batch : it was yuum, but then :/.. still not as soft as the beef cooked by my maid x(

well, porterhouse oh porterhouse....
when you are overcooked you are damn strong like a horse :/
So i looked for recipe from my country, Indonesia
as i can remember, my maid never fail to make edible dishes using beef

accidentally i found a food-porn picture of 'Selat Solo'
i have never tried this dish before, but it definitely different to beef steak of indonesiaafter some research and some people describe their mad-in-love for the dishes
i was SOLD

However, the recipes available in the web is different from one to another...,
i was confuseeed =____=
some recipe has Selat Solo made as a soup thing (which i am sure an epic misleading), mostly have salad to go with it.. and the one published in the magazine simply has only simple steamed veggies with homemade mayonnaise

so, i decided to do combine all the best from each recipe,
i used different recipe for the marinating sauce, the sauce, and instead of having salad for this dishes, i made mayonnaise as one of the recipe suggested

so, for the meat, i use this recipe from Keluarga Nugraha
Keluarga Nugraha is one reputable website, and once i tried their recipe, pretty good, so, why not having it again :D

for the sauce :
i combine the method from keluarga Nugraha only that i didn't add anymore spices as i used the oil previously used to cook the meat and of course i didn't have the courage to mix it with milk, my bf who will eat the dish said that the combination is just.. weird

i make the half of the recipe for the mayonnaise and i can say that I LOVE IT :)
after marinating the meat for more than 1 hour (put in the fridge and i fell asleep)
all the flavors absorbed and the meat wasn't tough :D
maybe because i used vinegar?

aah~ nothing makes my day better than a successful cooking and surprises :D

Sichuan house

My sister come visiting me from Sydney, so, me and my bf take her to Sichuan house in the city after drop the plan to buffet in Gaijin South Yarra (they were pretty full that time), and after Dainty Sichuan is South Yarra unfortunately closed when we came
ah~ what a bad luck =_=

so, as she go inside the Sichuan House, we all can smell the aroma of Sichuan Pepper
make us droll and our tummy singing in high pitch
and my sister said WOW for the smell
*Now* i think everyone who are greeted by such divine smell will all say WOW
first it happened to me and y bf
second to our sharemates
and third, to my sis
it suddenly, i presume as people automatic-basic-gratitude towards Sichuan foods :)

so, after a few of debate with the waitress (when we order A, she said A is no good, better b... c is like homecooked food, nothing special==alas, my bf realised that despite looking nice and honest, she recommended us the pricey things from the menu =_= )

so, we ordered

Enchanting il Dolce Freddo~

Il Dolce....
the name has long been announced by my cousin when she visited Sydney last year
she said that Sydney's ice cream is not better than Melbourne
and when she pronounce il Dolce or MovenPick
i can see her eyes sparkling
well.. she seems like a devoted worshipper to the latter one though :p

So, now when i am in Melbourne, i have tried il Dolche
and..
I AM SOLD O.o

i love love it, i can even recall the first flavour i sampled there, Cookies ice cream, damn yum !! Very Cookies-y :D. BF agreed :), we have never stop coming back to il Dolce since the first time that gelato visited out tastebuds :)

18/03/2010--Derby Thai


The first month i live here in Caulfield i was attempting to be a nerd (coz i think it's so cool to be a nerd) and didn't go out much, but, after i attended the communication class, where i have to read old-british novel every week, i changed my mind.. i don't want to be a nerd anymore :(

So, one day me and my bf (it was our second date) went to a place called Derby Thai, this restaurant is not big, small indeed, and a lot of Monash students eat here, and sometimes you have to wait outside to get seats because the seats are damn limited.

After struggling on what to eat, i decided to go for Red Curry :D
and oh boy, i regret nothing at all
i left the restaurant with the taste of the curry lingering on my lips. DAMN YUMMY, well, for me :). My bf, when he tried a bit, he said, too spicy for him

* it contains bamboo shoot, so for those who don't favour bamboo shoot, i advice you !!
(to put the bamboo shoot aside)

Derby Thai is worth the price :D, good food, fast service and i keep going back for more :D. Definitely one of my favorites :).

31/03/2010--Ramen Ya

Bf said that he was craving for ramen, so, we went to city to satisfy his craving
Kenzan was unfortunately closed :(
so, we went to a place called Ramen Ya in GPO

When i ate Kenzan's ramen and soba noodle, it was goooood for me,
i could not believe it, coz i never liked Ramen before, i personally think Ramen is too bland
it's not something that i would be craving for.. :(, not trying to be offensive here :/

i guess i can blame it on the way i was brought up.
Surrounded by spicy foods, Ramen is like.. not flavourful enough for me =__=
so, when i ate Kenzan, i was impressed :D
...i simply jumped into a conclusion that every foods at GPO are yummy...

my bf also said Ramen Ya sells good Ramen, so, i
decided to give it a shot
and he himself ordered a bento box (should be the other way around :/ )

* Bento Box, i like it :D, prefer this to the ramen :D

* Pork Ramen, i think... bf said the broth was good--i said it was so so, i think you can listen to his comment about this, coz he is a ramen eater

so, it was cheap and fast service O.o
under 20 for all i think :D
but, nah, i will not come back for the ramen again, i don't find myself like it :/
but bento box, i quite liked it :D
so, won't mind to have it again

Horray !!
Now that exam is over (time to throw away all those political matter =_=)
finally i can make a blog about my lives in ..err... currently in Melbourne :D
